The oldest noodles

Noodle-like pasta from the Bronze Age was found during excavations in Saxony. Dried noodles can be stored for a particularly long time and are easy to transport.

You will need

Ingredients for the noodle dough

  • 4 handfuls of wheat or spelt flour (it is best to use very fine-grained flour)
  • 4 eggs
  • salt
  • possibly some water

Preparation

Work the ingredients into an elastic dough, which you then shape into a ball and – covered with a cloth – leave to rest for a while.

Then form the dough into finger-thick rolls. You can also roll out the dough thinly and tear it into small pieces. Now let the dough dry briefly.

Next, make a hearty broth from bones and root vegetables, or use instant broth for convenience. Let the noodles cook in it. Finally, season with herbs and salt as desired.

If you let the uncooked noodles dry well, it will keep for a very long time.
